The one you can shoot best! I've taken stock guns out of the box and shot master scores with them. For the average shooter, all you really need to do is get a decent set of high profile sights and perhaps a trigger job to be competitive. Once you get 10-20,000 rounds downrange in competition you'll learn quickly which is best for you before you spend thousands for a gun that shoots master level long before you need it? If you can afford it, of course you can invest in the best available. There are a number of superb 1911 gunsmiths out there and many are unknown outside of a small circle.
