Glue the motorcycle leather to 5-6 oz cowhide, and off you go. From there you can mold it just like you would normally.

I believe you'll find with experience that it's better to trim off the edges after the stitching is done. It's a lot easier to get smoother, even edges that way, and burnishing will be better too.
