Bayou 200SWC coated is one of my go to bullets too. 1.250" for that bullet feeds & chambers nicely in all my pistols with mixed brass.

2011's in 45 are reliable. 45 is the original! Reliability is all build dependant and magazines are a big part of the equation too.
SVI is highly recommended. STI is in the midst of change.

Yes, the RIA doublestack (Para) grip feels bigger, wider & blocky compared to a 2011. Try it out before you buy and at least hold one.
I wear a size 9 glove and the grip size is just fine for me....
